Wine Type: Dessert Wine
Variety: Assyrtiko 85% with 15% Aidani
Source of Grapes: Grapes were sourced from old vines averaging 100 years of age planted in the volcanic, stony soils of Megalochori, Pyrgos and Akrotiri villages at an altitude up to 400 m.
Vinification: The grapes are left traditionally to sun-dry for two weeks, to concentrate sugar, acidity levels and flavors. Fermentation follows and maturation takes place in new, second and third use barriques for 90months.
Tasting Notes: Dense and complex aromas of dried fruits, chocolate, caramel, espresso coffee and walnuts. Luscious on the palate, yet not cloying with “kicking” acidity levels. Exuberant and complex lingering finish. This mahogany colored wine-elixir concentrates all the special traits of Santorini’s unique terroir.
